In a large pot- simmer
2-3 lbs potatoes( depending on how many will be eating- it affects proportion
4 celery stalks
1 med onion all chopped
1/4 lb small cubes of ham ( I buy smith field low-fat ham/healthier
add 4 cups water
flavor with (I never measured- but guess 1 teaspoon each of thyme and basil)
3 bay leaves
salt (1/2 tsp) or to taste)
pepper(1/2 tsp or to taste)
optional- (old bay seasoning) restaurant advises it. I don't use it.
optional- (cream of mushroom soup)
the restaurant I eat at uses this and wins best seafood chowder of the area
I have not added it yet.
add 1/2 lb each of scallops, shrimp( cleaned and deveined
- I cut in half), and fake crab meat
(usually made of cod)
There is a difference in flavor of boiling the seafood before adding or adding
taste both ways to see which you prefer. I usually add raw.
Add 1 cup fat free Half and half to thicken.
Do not boil after adding milk.
add 1 tsp parsley 5 min before serving-
top with fresh black pepper
