Italian Soup

Maybe some of you in cold climates will enjoy this soup:-) So far- its a hit- try it!

1 lb. Hot Italian Sausage, browned and crumbled
3 med. onions, diced
2 large ripe chopped tomatoes, sauteed with basil (or one large can diced tomatoes)
1/2 can black olives, olives cut in half
1 pkg. fresh mushrooms, sauteed in butter and garlic
1/3-1/2 of One Package frozen chopped spinach

Drain excess fat from sausage. In large pot, add all six top ingredients. Add-

2-3 Tbsp. Italian Seasoning
2 tsp garlic
1 tsp. black pepper
5 whole bay leaves
3 cans Swanson chicken broth
4 chicken boullion cubes (I wrote this as I made up the recipe- alter boullion specifications as you wish)
3 cups water (or more)
1 Tbsp. chives

Simmer. Add 8 oz. Penne Rogate (italian style macaroni) within a half hour of serving to retain the "body" of noodles.
Top with freshly ground black pepper.
Also good as left-over, but noodles will change texture- blends more with soup. Never stir much and warm on med heat- to keep the left-over noodles from crumbling.

Sprinkle Ricotta cheese on top of the bowl of soup and serve with crusty bread.
